New Italian-japanese restaurant wants to elevate the Copenhagen dining experience
To have an ambition of elevating the Copenhagen restaurant experience is quite a bold move in one of the most applauded gastronomic cities in the world. Nevertheless, that is the overall goal for the new restaurant Levi in Copenhagen.
The team behind the city’s new restaurant on the corner of Ny Østergade and Store Regnegade is an experienced combination of skills. Jesper Boelskifte is the owner of MASH, Le Sommelier, and Umami, Peter Trauboth is a former consultant at Alchemist and Geranium, and the Danish designer Johannes Torpe, who has been responsible for the design of the new premises. Together, they’ve created the new restaurant Levi, with a kitchen style described as Italian-Japanese. One can sense that something new and exciting is cooking in the city.
Levi’s new head chef Andrea Calducci brings a kitchen experience in line with the ownership. Calduccis’s work counts many prominent restaurants in Europe and Asia, including Fat Duck in London, which has three Michelin stars. The new fusion cuisine brings the best of Carducci’s abilities to the capital, and one can expect dishes such as lobster sashimi with gremolata, monkfish tempura, and squid with fava beans, among more well-known dishes about risotto with peas and stracciatella and lamb breast with salsa verde.

However, the level of ambition excludes no one, and the price of a dish fits in the very comfortable segment around DKK 100 – 250. The same rules go for the wine selection at Levi. Jesper Boelskifte and Peter Trauboth have hand-picked those specific bottles they would like to drink.”In Italy, wine is a natural addition to a meal and a consistent part of life. There’s always a bottle on the table – and it tastes good. This is where we want to go with the wine experience at Levi – no long speeches, just insanely good wine and guidance ” says Jesper Boelskifte, who has also created an incredible collection of grappa.
The restaurant is named after Romano Levi, an Italian grapple master. “Grappa is the symbol of the good meal in Italy, and therefore there’s also plenty of opportunities to finish off the experience Italian style, with some of the very best bottles – also Levi’s own,” says Jesper Boelskifte.
